Grilled Winter Vegetable Salad

Who said salads are just for summer?  How about this Grilled Winter Vegetable Salad courtesy of Simply Stirred using their multi award winning Caramelised Balsamic range.

Grilled Winter Vegetable Salad

IngredientsSimply Stirred Caramelised Balsamic

  • 4 tbls olive oil
  • 1 punnet of cherry or grape tomatoes.
  • 1 red capsicum
  • 250g pumpkin
  • 250g sweet potato
  • 1 small eggplant
  • 1 large zucchini
  • 4 field mushrooms
  •  salt
  •  Simply Stirred Caramelised Balsamic with Pepper

Cooking Directions

  1. Preheat Oven to 180 degrees celcius.
  2. Remove seeds from capsicum and cut into 4 pieces.
  3. Remove stalks from mushrooms and chop roughly all remaining vegetables and place in a bowl.
  4. Drizzle oil over vegetables and toss to coat.
  5. Place all vegetables in a roasting tray, sprinkle with a little salt and and bake at 180 degrees for approx 25 minutes. Stir once or twice throughout cooking time.
  6. Pierce a piece of pumpkin to test it is cooked through.
  7. Remove from oven and drizzle Simply Stirred Caramelised Balsamic with Pepper over the vegetables and serve.
