Balsamic Strawberry and Mascarpone Tart

With Mother’s Day fast approaching, there is nothing Mum appreciates more than something a little sweet, something a little decadent, and more importantly something she doesn’t have to whip up herself.

The extremely talented people at Simply Stirred have an ever expanding range of Caramelised Balsamics that are multi medal winners.  One of our absolute favourites in this range is their Caramelised Balsamic with Raspberry and Vanilla which is perfect as a dipping sauce, drizzled over salads, served with grilled haloumi or decadently poured over strawberries and ice cream.

Simply Stirred have created a lovely Balsamic Strawberry and Mascarpone Tart that not only tastes amazing and is easy to prepare but looks absolutely beautiful, your Mum will be most impressed.

Raspberry and Vanilla Mascarpone Tart

Balsamic Strawberry and Mascarpone Tart

INGREDIENTS

  • 1 and ¾ cups (240gm) plain flour
  • 2 Tbls pure icing sugar
  • 180gm unsalted butter
  • 3 Tbls Iced water
  • 1 and ½ punnets strawberries
  • 250gm mascarpone or cream cheese (if using cream cheese, ensure it is at room temperature)
  • 1 Tsp finely grated lime rind
  • 3 Tbls Simply Stirred Caramelised Balsamic with Raspberry & Vanilla

COOKING DIRECTIONS

  1. Process flour, icing sugar and butter in a food processor until resembles fine breadcrumbs. Add iced water and pulse until mix just comes together.
  2. Remove from processor bowl, knead slightly, cover in plastic wrap and put in fridge for 10 minutes.
  3. Preheat the oven to 200 degrees celcius
  4. On a floured board, roll pastry into a large oblong, approx 5 mm thick.
  5. Grease fluted flan tin with a removable base with butter or cooking spray – press pastry gently into base and trim any overhanging pastry edges.
  6. Place baking paper on top of pastry and fill with beans or rice. Bake for 15 minutes.
  7. Remove the beans or rice and the paper and bake for another 10 minutes.
  8. Remove from oven and set aside to cool.
  9. Place the strawberries and Simply Stirred Caramelised Balsamic with Raspberry & Vanilla in a bowl, gently toss to coat and put aside for 10 minutes.
  10. Beat mascarpone and lime rind together with a wooden spoon until well combined. Spread evenly over the cooled pastry case.
  11. Remove strawberries from bowl and slice in half.
  12. Top cream mixture with strawberries and drizzle a little more balsamic around serving plate – add some lime zest curls if you fancy!
